Confetti Potato Salad - Weight Watcher Style


My family is invited to a lot of picnics and backyard gatherings during the summer months. We make these fun family events by trying out new recipes. I found the potato salad Weight Watcher recipe that I think is a real winner. My family thinks it's a great looking dish, but also taste delicious.

Confetti Potato Salad

Ingredients:

3 pounds red potatoes, cubed

6 slices bacon Turkey

1 / 2 cup reduced-calorie mayonnaise

4 tbsp. red wine vinegar

4 tbsp. fresh parsley, chopped

1 tsp. salt

1 / 2 tsp. freshly ground black pepper

1 cup scallions, chopped

instructions

Bring a large pot of water to a boil. Add cubed potatoes and a pinch of salt and cook until potatoes are fork-tender. Fingers in a large saucepan and pour in enough water to cover them. Heat to high and bring to a boil. Reduce heat to medium and simmer until the potatoes with a fork-tender, about 15-20 minutes. Drain well.

Cook bacon in a hot pan or in microwave until crisp. Drain on paper towels. Break bacon into small pieces.

Combine mayonnaise, vinegar, parsley and salt and pepper in small bowl.

Transfer cut potatoes into large bowl. Add bacon and scallions. Add dressing mix and toss until well coated.

makes 8 (3 / 4 cup) servings.

Variations

can make this potato salad is replacing the color of chopped red onion for the scallions. For an even crunchier potato salad, add 1 / 2 to 1 cup chopped celery.

I made this potato salad for a covered dish lunch a few weeks ago. It was a great success and several people have asked me for the recipe.
